Coconut Date Blondie Bars
Medjool dates go with any baked goods and these coconut date blondie bars are the proof of that. The milky flavor of the coconut and the sweet caramel taste of dates is a match made up in heaven.
Ingredients:
- 1 1/2 cups of unsalted butter
- 1 1/2 cups of brown sugar
- 3/4 cup of sugar
- 3 eggs
- 2 tbsp. of vanilla extract
- 4 1/2 cups of unbleached all-purpose flour
- 1 1/2 tbsp of baking soda
- 1 tsp salt
- 10 oz. of chopped medjool dates (abot 15 pitted)
- 2 cups of sweetened coconut flakes
- Coconut cooking spray
Method
- Preheat oven to 350°.
- Grease a large cookie sheet with coconut cooking spray.
- In a large mixing bowl combine the butter, sugars, vanilla, eggs, baking soda and salt.
- Beat at medium speed with electric mixer until fluffy.
- Stir in flour, dates and coconut with a heavy-duty spoon until everything is combined.
- Bake for about 30 minutes or until lightly browned.
- Sprinkle with extra coconut, let cool, cut in squares, and enjoy.
