Fall Salad
Enjoy this healthy, delicious, beginner-friendly and easy to make salad with accesible ingredients
Ingredients:
- 4 chopped pitted dates
- 1/2 cup roasted sweet potato
- 6 cups salad spring mix
- 1.5 oz. green apples
- 1/4 cup feta cheese
- 1/4 cup diced almonds
- 0.5 oz red onions diced
- 1 tsp ginger
- 1/4 nutmeg
- 1/4 tsp sea salt
Dressing
- 5 tbsp. olive oil
- 1 tbsp. lime juice
- 1 tbsp. dijon mustard
- Garlic salt to taste
Method
- Preheat oven to 400°.
- Cut the sweet potato in small squares (about an inch) and bake with olive oil and salt for 20 minutes set aside to cool.
- Meanwhile in a bowl mix in all the dressing ingredients and set aside.
- Now ready to incorporate all the ingredients into a large salad bowl. Mix in with the dressing, serve and enjoy.
